  1. Heat a large skillet over medium high heat. Crumble the sausage into the pan and cook until it is well browned. Turn and break apart as needed.
  2. Remove the sausage from the pan and drain on a paper towel. Pour off most of the drippings. Add 3 tablespoons of olive oil to the pan and add the onions and garlic. Saute stirring frequently until the onion is golden and the garlic is fragrant, 5-7 minutes.
  3. Add the artichokes and spinach to the pan and continue to cook for another 3 - 5 minutes. The artichokes should have a little color and the spinach should be wilted.
  4. In a large bowl, combine the toasted bread cubes, sausage, and the vegetables from the pan (include all the drippings, too). Toss to combine.
  5. Add the seasonings that you are using along with the cheese and toss again to combine.
  6. Pour in the eggs and blend well. Add the chicken stock. Use enough so that the stuffing is very moist, but not mushy. Taste and make any necessary adjustments to the seasonings. Add a little salt if you think it needs it.
  7. Grease a large rectangular baking dish. Add the stuffing and smooth out evenly. Do not pack it down. Cover with foil and bake in a pre-heated 350 degree oven for 35 - 40 minutes.
  8. Combine the remaining olive oil and the melted butter. Remove the stuffing from the oven. Take off the foil and drizzle the butter/olive oil mixture over the top. Return to the oven for another 15 - 20 minutes until the top of the stuffing is golden brown.
  9. Remove from the oven and allow to rest for 10 minutes before serving.

  1. Heat the olive oil in a medium fry pan. Add the onions and cook until they begin to soften. Add the peppers and cook for 2-3 minutes until the peppers begin to soften.
  2. Add the spinach and garlic to the pan and cook stirring frequently until the spinach is wilted and the garlic is fragrant.
  3. Scramble the eggs and add to the pan. Cook and stir over medium low, adding half of the cheese. Heat until the eggs are set to your liking.
  4. Sprinkle the remaining cheese on the flat bread and top with the eggs. Roll up carefully and let sit for 1 minute. Cut in half and enjoy.

  1. Heat the olive oil in a medium fry pan. Add the garlic and cook for 2 minutes. Add the spinach and cook until the spinach is wilted 3 - 4 minutes or so. Remove from heat and allow to cool.
  2. Spoon the ricotta into a medium mixing bowl. Lightly beat the eggs and stir into the ricotta. Add the cheese and pepper and stir again.
  3. Add the spinach and garlic mixture to the bowl and stir to combine well. Taste and add salt if needed.
  4. Use in lasagna, as ravioli filling or to stuff shells or manicotti.

  1. Broil or grill the sausage links until cooked. Let cool until they can be handled, Slice into 1/2 inch "coins". Set aside.
  2. Bring a large pot of salted water to a boil and add the pasta. cook according to Package directions reducing the cooking time by a minute. Prepare the sauce while the pasta cooks.
  3. Heat a large frying pan over medium heat. Add the olive oil and heat. Add the garlic and red pepper flakes and cook, stirring often 2 minutes until they begin to become fragrant. Watch carefully so the garlic doesn't brown and become bitter.
  4. Add the spinach and cook until the spinach is just wilted. Add the cream and cheese and cook over medium low heat stirring to melt the cheese and blend everything together.
  5. Return the sausage to the pan. Continue to simmer gently until mixture reduces slightly and begins to thicken.
  6. Drain pasta, reserving 1/2 cup of the water. Add the pasta to the pan and toss to combine it with the sauce. Cook another minute or two. Add a little of the pasta water if the sauce seems to need it.
  7. Serve topped with the Parmesan cheese.

  1. Heat the olive oil in a large fry pan, Add the bacon and cook until it is lightly browned. Remove all but 1 tablespoon of the drippings, then add the onion, red pepper flakes, and garlic. Cook over medium heat until onions begin to soften and the garlic is fragrant. Add the chickpeas and continue to cook, stirring occasionally until they begin to pick up some color,about 5 minutes Add the spinach and cook until it wilts 3 minutes or so.
  2. Add the chickpea cooking water and raise the heat to medium high. Simmer for 5 -7 minutes. The sauce should thicken and reduce slightly. Bring the heat back down to medium and add half of the Romano cheese and stir until it melts.
  3. Add the cooked pasta to the pan and toss to coat it with the sauce. If it seems a little dry, add some of the reserved pasta water. Check the seasonings and add salt and pepper to taste. Top each serving with the grated cheese and a drizzle of olive oil.
