  1. Cut the top off the head of garlic (just enough to expose the cloves a bit). Place in the center of a square of heavy duty foil. Drizzle with a little olive oil and wrap sealing completely but leaving a little breathing room. Place in a 350 degree oven and bake for 40 minutes or until the kitchen smells wonderful and the garlic feels soft. Unwrap and allow to cool.
  2. Toast the pine nuts on top of the stove. Place them in a dry non-stick pan and toast over low heat shaking frequently to prevent burning. This should take 6 or 7 minutes.
  3. Place the basil and parsley leaves in the bowl of a processor. Squeeze the cooled garlic into the bowl. Add the pine nuts. Pulse to coarsely chop the ingredients.
  4. Add the grated cheese and pulse to combine.
  5. With the motor of the processor running, stream the olive oil into the feed tube. Stop as soon as the mixture is the texture that you like. (Do not process until smooth).
  6. Scrape the pesto into a bowl. Check for seasoning Add some ground pepper and a pinch of salt if you want.
  7. It is now ready to use. It can be frozen in 1/4 cup (or whatever amount you like) packages. It will keep in the refrigerator for a week. Pour a thin layer of olive oil on the pesto before you put it in the refrigerator to help preserve color and flavor.

  1. Whisk the dressing ingredients together in a small bowl or shake in a jar with a tight fitting lid. Set aside
  2. Place the bread cubes in a baking pan. Spray lightly with olive oil cooking spray and toss to coat evenly. Bake at 350 degrees for 10 - 15 minutes until the cubes are dry, crisp and just barely browned. Place in a large serving bowl.
  3. Combine the Brussels sprouts, red onion, and bell pepper in a large roasting pan. Add the tablespoon of olive oil and the salt and pepper. Toss to coat evenly.
  4. Roast at 350 degrees for 35 - 40 minutes. The veggies should be tender and lightly browned. Pour the vegetables and any liquid over the bread cubes and toss to combine.
  5. Pour the dressing over the mixture in the serving bowl and toss to coat.
  6. Add the tomato halves and toss once more. Allow to sit at room temperature for at least 30 minutes. Toss again and serve at room temperature.

  1. To Make the Chips: Cut the tortillas into wedges or strips, as you like. Spray two large baking sheets with the olive oil spray. Lay the tortilla pieces in a single layer on the sheet. spray with cooking spray and sprinkle lightly with the salt. Bake at 325 degrees for 7 minutes or so. Turn the chips over and sprinkle with a little more salt and bake another 7 minutes or so. The chips should be crisp and slightly darker brown. Cool completely and store airtight. use as you would any chip.
  2. To Roast the Garlic: Cut the top off a head of garlic (you should see the tops of the cloves). Place in the center of a piece of aluminum foil. drizzle with a little olive oil and seal in the foil. Bake at 350 degrees for 30 - 45 minutes. The cloves should look golden and the head should feel soft. Oh, and it will smell divine.
  3. In the bowl of a processor, combine the garbanzos, lemon juice, water, tahini, olive oil and the cloves of roasted garlic. Process until as smooth as you want it. Add the seasonings and process again.
  4. Taste and adjust the seasonings. If mixture is too thick add a little more water. Scoop into a bowl and cover. Chill in the refrigerator at least 3 hours or if possible over night. Serve with chips or vegetable dippers.

  1. Heat the olive oil in a medium fry pan. Add the garlic and cook for 2 minutes. Add the spinach and cook until the spinach is wilted 3 - 4 minutes or so. Remove from heat and allow to cool.
  2. Spoon the ricotta into a medium mixing bowl. Lightly beat the eggs and stir into the ricotta. Add the cheese and pepper and stir again.
  3. Add the spinach and garlic mixture to the bowl and stir to combine well. Taste and add salt if needed.
  4. Use in lasagna, as ravioli filling or to stuff shells or manicotti.
