Instructions
  1. Combine the flour, cocoa, espresso powder, baking soda and salt. whisk together to blend thoroughly.
  2. Cream butter in a large bowl. Add the sugars and beat until the mixture is light and fluffy.
  3. Add the eggs one at a time, beating after each addition. add the vanilla and beat to blend.
  4. Gradually add the dry ingredients (a third at a time). gently blend. Fold in the chips.
  5. Spoon by scant tablespoons onto parchment lined baking sheets.
  6. bake at 350 degrees 8 - 10 minutes until the edges just begin to brown. Remove from oven and allow to cool on the baking sheet for 3 minutes.
  7. Remove to cooling racks and allow to cool completely. Store in an air tight container.

Instructions
  1. Whisk together the flour, soda, salt and spices. Set aside.
  2. In a large bowl, cream the butter until fluffy. Add the sugars and beat until light and fluffy.
  3. Add eggs one at a time, beating after each addition. Add the vanilla and continue to beat until well combined.
  4. Add in the flour mixture a little at a time blending gently but well.
  5. Stir in the candied fruits, nuts, and chips.
  6. Drop by tablespoon on to a parchment lined baking sheet. Bake at 325 degrees for 10 minutes or until the edges just begin to brown.
  7. Remove from oven and allow to cool on baking sheet for 5 minutes. Transfer to wire racks to cool completely. Store airtight.

  1. Blanch and shock the broccoli: Cook the florets in boiling salted water for about 1 minute. Remove to a bowl of ice water to stop the cooking. Drain well, pat dry, and place in a single layer in a baking dish that has been lightly coated with cooking spray.
  2. Layer the turkey on top of the broccoli.
  3. In a medium saucepan, melt the butter and olive oil together. Add the mushrooms. shallot, and garlic and cook stirring frequently until everything is soft and fragrant. This should take 5 - 7 minutes.
  4. Add the sherry to the pan and sprinkle the flour in as well. Whisk constantly to keep things smooth and allow to cook for 2 minutes. You will have a thick ball of stuff.
  5. Add the stock and milk a little at a time as you continue to whisk. The goal is to get all the liquid incorporated without creating lumps. Bring to a boil.
  6. Reduce the heat slightly and continue to cook and stir until the mixture thickens, about 4 - 5 minutes. Stir in the mustard and herbs. Remove the pan from the heat.
  7. Add about half of the grated Swiss cheese and stir until it melts Taste and add salt and pepper as needed. Pour the sauce over the broccoli and turkey.
  8. Combine the remaining Swiss Cheese with the Parmesan and panko crumbs. You can add a drizzle of olive oil if it seems too dry.
  9. Sprinkle the crumb mixture evenly over the casserole. Spray lightly with cooking spray and bake at 350 degrees for 30 -35 minutes. The crust should be golden and everything else should be bubbly.
  10. Allow to rest for 5 minutes or so before serving.

  1. Combine the apricot pieces and water in small pan. Simmer covered for ten minutes until plumped and tender. Drain and set aside.
  2. Preheat oven to 350 degrees. Butter a 9 X 9 baking pan. Combine sugar and butter until blended. Gradually add one cup of the flour stirring until a soft crumbly dough forms. Press the dough evenly into the bottom of the pan. Bake 25 minutes or until light golden. Remove from oven.
  3. Mix the remaining flour, salt, and baking powder in a small bowl. In a medium bowl, beat the eggs and brown sugar until they are thick and light colored. Stir in the extracts, blending well. Slowly add the flour mixture. Add the almonds and apricots, blending well.
  4. Pour the mixture onto the baked crust. Smooth evenly with a spatula. Return the pan to the oven and bake for approximately 30 minutes more. Top should be deep golden brown and feel springy.
  5. Cool completely on wire rack. Cut into 16 squares.

  1. Heat oven to 400 degrees. While the oven heats, cook the bacon in a large skillet until brown and crispy. Remove and drain on paper towels. Remove drippings from the pan and reserve 2 tablespoons. The rest can be discarded. Keep the skillet, as is, to use later.
  2. Line a large baking sheet with foil and spray with cooking spray. Lay the thyme and sage on the baking sheet to make an aromatic bed for the squash. Lightly brush the cut edges of the squash with 1 tablespoon of the bacon drippings and lay cut side down on top of the herbs. Bake for 20 minutes. Turn the squash and bake for 15 minutes more or so.it should be quite soft.
  3. Remove the squash from the oven and let it cool for 15 minutes or until it can be handled, Make sure to save the herbs. Scoop the squash from the skin and place in a large bowl. Throw the skin away. Mash the squash until "smooth-ish."
  4. Heat the remaining bacon drippings and the butter in the reserved skillet. When it is hot, add the shallots and cook for a few minutes until softened and just beginning to brown. Add the mashed squash and the warm half & half to the skillet. Stir to combine (if things seem too thick add a little more half & half).
  5. Crumble the herbs, (leave the stems out of it) and add to the pan. Stir all but 2 tablespoons of the bacon into the mixture. Heat gently until everything is hot and happy. Season with salt and pepper to taste. Garnish with the remaining bacon. Serve with pride.
