Ingredients

12 Oz. Jar
Roasted Red Peppers
Drained and roughly chopped
2 – 3
Green Onions
Thinly sliced
2
Cloves
Garlic
Minced
1/3
Cup
Ripe Olives
Sliced
1/4
Cup
Parsley
Chopped
1/4
Cup
Cilantro
Chopped
1/2
Jalapeno Pepper
Seeded and finely chopped
Zest of 1 Lime
Grated
1
Tblsp.
Olive Oil
Juice of 1 Lime
Kosher salt & Pepper
To taste
Servings:
Instructions
Put the peppers in a medium bowl. Add the onions, garlic, cilantro, and parsley. Stir to combine.
Add the jalapeno and lime zest and toss to combine.
Stir in the lime juice and olive oil and stir again to combine.
Taste and add salt and pepper to taste. Cover and chill for several hours.
Serve as a garnish for tacos or with chips.
