Bring the lentils and garlic to a boil in about 3 cups of water. Reduce heat to simmer, cover and cook until “mushy” about 15 minutes. Drain well and allow to cool.
Combine all the ingredients in a food processor or blender. Process until smooth, scraping down the sides as needed.
Taste and adjust any or all of the seasonings.
Scrape into a bowl. Cover and chill at least 2 hours.
Serve with veggies and/or pita chips.
