Ingredients
- 1 Tsp. Olive Oil
- 1 Cup Bell Peppers Any color, thinly sliced
- 1/2 Cup Onions Thinly sliced
- 1 Zucchini Use a potato peeler to make ribbons
- 1 Clove Garlic Chopped
- 2 Tblsp. Light Cream Cheese Spread I used Chive and Green Onion
- 1 Flat Out Flat Bread

- Heat the olive oil in a medium fry pan. Add the onions and the peppers. Cook over medium heat stirring occasionally until they begin to soften. 3-4 minutes.
- Add the zucchini ribbons and garlic to the pan and cook for 3 minutes more.
- Spread the cream cheese on the flat bread within a 1/4 inch of the edges. Top with the cooked vegetables and roll up.
- This is good warm or at room temperature.
