Italian Meat Loaf

DIGITAL CAMERAMeat loaf is so versatile that it lends itself to an almost limitless number of variations. Any meat, poultry or combination there of can go into it . There are even meatless meat loaves. Seasoning possibilities are virtually endless, too. From simple onions and ketchup to exotic spice blends and intriguing vegetables, the flavor profile is literally all over the (world) map.

I’ve made many different meat loaves, but this seems to be everyone’s favorite. It combines Italian sausage and ground turkey with an Italian flavored cast of characters. It makes 2 generous loaves. One for dinner and one to freeze (each loaf will make four servings).DIGITAL CAMERA You could also use the extra loaf for some awesome meatloaf sandwiches. So from meat base to seasoning to cooking vessel, meat loaf is the king of variety. As with all of my recipes, this is just a suggestion based on what i like. Your  meatloaf will be fabulous and I’d love to hear about it.

  1. Lightly combine the sausage and ground turkey in a large bowl. Your hands are the perfect tool for this. Set aside.
  2. Heat olive oil in a medium fry pan and add the onion, garlic, parsley, and pepper flakes if you are using them. Cook over medium heat for a few minutes. The onion should soften and the garlic should be fragrant but nothing should be brown. Remove from heat and allow to cool slightly.
  3. Add the bread crumbs, cheese, Italian seasoning, tomato sauce, cooled onion and garlic mixture, and the beaten eggs. Mix with your hands until well combined.
  4. Line two 8 X 4 inch loaf pans with plastic wrap. Use a large enough piece to overlap over the top of the loaf. Evenly divide the meat mixture between the two pans. Pack the meat in firmly so that the loaf will be a uniform thickness and hold together as it bakes. Refrigerate for an hour or so to firm things up a bit. You can also make mini loaves if thta's tickles your fancy.
  5. Remove loaves from refrigerator. Carefully remove the meat from the pans using the plastic wrap. Invert into a shallow baking pan that has been sprayed lightly with cooking spray.
  6. Bake in a pre-heated 350 degrees oven for one hour or until a meat thermometer registers 165 degrees. remove from the oven.Let rest in the pan for ten minutes. Cover lightly with foil while they rest.
  7. Cut into thick slices. Serve naked or top with sauteed peppers or chunky tomato sauce.

  1. Mix the Asian Dressing, 1 Tablespoon Chili Garlic Sauce,1 Tablespoon Sesame Oil, 1/4 Cup Hoisin Sauce, and 1 Teaspoon 5 Spice Powder together. Place Pork cubes in a zip top bag. Add the combined marinade ingredients. Seal the bag and toss and knead to coat the the pork with marinade. Marinate in refrigerator overnight.
  2. When you are ready to prepare the rice, heat a wok or very large fryi pan over medium high heat. Add the canola oil and the remaining tablespoon of sesame oil to the pan. Heat for 1 minute then add the rice. Toss until all of the rice grains are coated. Fry tossing occasionally 5 minutes. or until rice is just taking on some color.
  3. Add soy sauce and remaining 5 Spice Powder to the rice. Toss to mix and continue to cook 5 minutes or so, stirring occasionally. The rice should become light golden and have some crusty bits.
  4. Add the pork and marinade to the pan and toss to combine. (It is okay to add the marinade since the meat is already cooked and has been in the refrigerator.) Add the remaining Chili Garlic Sauce and Hoisin sauce to the pan. Cook the rice and meat 5 - 8 minutes more tossing frequently The rice should get a little darker and the pork should begin to caramelize.
  5. Add the thawed peas and carrots to the pan. Stir to incorporate. Heat for 2-3 minutes. Add the green onions and heat for 1 - 2 minutes more. Serve in pasta or soup bowls as you wish.

  1. Place the potatoes and the smashed garlic in a pot. Add water to cover the potatoes by about an inch. Add salt and bring to a boil over high heat. Reduce the heat to medium and simmer the potatoes while you prepare the chicken and gravy. These can take care of themselves save a stir every now and then.
  2. In a large skillet cook bacon until it is lightly browned and has rendered some fat. Remove from pan and drain on paper towels.The bacon will cook more later when it is combined with the onions. Leave 2 Tablespoons of drippings in pan.
  3. In a shallow bowl, mix 1/2 cup flour with the Paprika and Bacon Salt. Dredge chicken tenders in flour and transfer to the hot frying pan. Do not crowd the tenders. Brown in batches if they can't brown without touching. Turn to brown on all sides. This should take 7 -10 minutes or so. Remove from pan when browned and set aside.
  4. Return bacon to hot pan and add the onions. Toss to combine and coat with drippings. If the pan seems a little dry, add 1 - 2 tablespoons butter. Cook until onions are golden brown. Add remaining flour to pan and stir to incorporate the flour. Continue to cook 3 minutes or so stirrring often.
  5. Add the Chicken Broth and stir constantly until mixture begins to thicken and bubble. Reduce heat to low and stir in 3/4 cup of the Savory Garlic Cooking Cream. Return the chicken tenders to the pan along with any juices that have accumulated, stirring and turning the chcken until it is evenly coated with the gravy. Continue to cook over medium/low heat until chicken is cooked through, about 5 minutes.
  6. When potatoes are cooked, drain and return to pan. Combine remaining cooking cream and milk and add to potatoes. Smash, leaving more than a few lumps . Keep warm until ready to plate.
  7. Spoon the potatoes onto four plates. Divede the tenders evenly on top of the potatoes. Spoon the rest of the gravy over everything. Garnish with parsely if desired.

  1. Heat Olive Oil in a large skillet (with a lid). Add the Potatoes and toss to coat with the oil. Arrange in a single layer, cover and cook at medium heat for 3-5 minutes.Turn the potatoes and rearrange in a single layer. Cover the pan and cook fo another 3-5 minutes. The potatoes should be starting to feel tender. You no longer need the lid.
  2. Add the onions to the potatoes in the pan and cook for another 5 minutes until the onions are beginning to soften and brown. Add all of the peppers and cook, stirring occasionally 5 minutes or so until the peppers begin to soften.
  3. Raise the heat to medium high and add the sausage and garlic. Cook and stir until the sausage is beginning to brown. Keep the garlic moving do it doesn't burn.This should take 6 minutes or so.
  4. Add the Chicken Stock to the pan. Stir to loosen any brown bits and to coat the Slumgullion. Heat another 2 - 3 minutes. Add Salt and Pepper to taste. Remove from heat and serve.
