  1. Mix the parsley, chives, and thyme with the mayonnaise. Spread the mixture on both sides of the chicken breasts.
  2. Heat a fry pan over medium heat. Spray lightly with non-stick spray. Add the chicken breasts and cook, turning once until cooked through, about 5-7 minutes per side. Remove from pan and allow to cool slightly.
  3. Make the Dressing: Combine the dressing ingredients in a small jar with a tight fitting lid. Shake until everything is blended together. Refrigerate until ready to use.
  4. Toast the walnuts over low heat in a small fry pan. Cut the cherries in half and remove the pits. Cut the grape tomatoes in half lengthwise. Set all of these aside.
  5. Divide the lettuce between two large plates. Slice the chicken thinly and place on top of the lettuce. Sprinkle the cherries, tomatoes and walnuts on top of the chicken. Drizzle some of the dressing over the salad. Top with the blue cheese crumbles and serve.

  1. Combine all of the ingredients except the orange zest in a medium sauce pan.
  2. Bring just to a boil over medium heat. Reduce heat to low and simmer for 15 minutes or so, stirring frequently. The sauce should thicken and reduce slightly.
  3. Stir in the orange zest and simmer for 2-3 more minutes. Remove from heat and allow to cool. Use immediately or refrigerate for up to a week

  1. Combine the chopped mango, peaches, red bell pepper, and sliced green onions in a medium bowl.
  2. Allow any excess adobo sauce to drip off of the chipotles. Slice the chipotles open and scrape out the seeds and membranes. If you like more heat leave some seeds. Chop finely and add to the bowl.
  3. Zest the lime and add it to the bowl. Squeeze the lime's juice into the bowl. Toss everything together.
  4. Add the honey and the pinch of salt. Stir to combine. Cover and chill for at least 4 hours. Serve with chips or use as a cold sauce for grilled meat.

  1. Mix the vinegar, one tablespoon of olive oil, garlic, Italian herb blend, and dried herbs in a small bowl. Put the chicken breasts in a zip top bag and add half of the marinade. Seal the bag and refrigerate for 4 hours or overnight. Reserve the rest of the marinade for the glaze.
  2. When you are ready to cook the chicken. Heat the oven to 375 degrees. Place the breasts in a cooking sprayed shallow pan. Bake until cooked through 25 - 30 miutes.
  3. If you are grilling the chicken. Heat the grill and spray lightly with cooking spray. Add the chicken and grill over medium heat turning once until cooked through 20- 25 minutes.
  4. While the chicken is cooking, prepare the glaze. Heat the remaining olive oil in a small pan. Add the shallots and cook until golden brown, 10 minutes or so. Add the reserved marinade, chicken stock and honey. Heat to boiling. Reduce heat to medium and simmer until mixture is thick and reduced by about 1/3.
  5. Transfer the cooked chicken to the plates and drizzle with some of the glaze. Extra glaze can go in a bowl to be passed at the table.

  1. Put the ingredients you have chosen for your glaze in a small heavy bottom pan. Stir the ingredients together and heat to just boiling over medium heat, stirring frequently.
  2. Reduce the heat to low simmer and cook for 10 minutes or however long it takes for the glaze to reduce and slightly thicken
  3. When your ham is about 20 minutes from being completely heated, remove it from the ovenand raise the heat to 375 degrees. Make sure it is in the pan cut side down and pour about 1/3 of the glaze over the ham. Return to the oven for 5 minutes or so.
  4. Repeat the process of poring on the glaze and returning to the oven two more times. Remove the ham from the oven and let sit for 10 minutes before moving it to a cutting board. Slice the ham and drizzle with some of the pan drippings and serve.
