All Over the Map Asian Noodle Soup

This easy soup uses Asian ingredients from several different countries. Soba Noodles from Japan, Fish Sauce from Vietnam, Soy Sauce from China and broth in a box that is Thai inspired. It’s rounded out with American Pork, and vegetables that are available in most any grocery store.

Since this soup is literally all over the map it is fair game to any kind of modification you would like. Change the meat, change the noodles (rice or ramen noodles would be good) to whatever you have or like. The same goes for the vegetables.

I found this broth at Aldi. It is not one of their regular items so it may not be there when you go. Take a hint from the label and you can probably add ginger, lime juice, fish sauce, and chili to chicken broth and get a similar result. (Yes, I did taste all of those flavors in the broth.)

The cooking times in the recipe will result in tender crisp vegetables. Adjust the time to your preference.

  1. Heat 1/2 tablespoon oil in a soup pot. Add the ground pork and cook until it is no longer pink. Remove with a slotted spoon and set aside.
  2. Add the remaining oil to the pan and add the onions and carrots to the pan and cook for a few minutes until they are fragrant. Add the garlic and ginger and cook 2 minutes longer.
  3. Return the pork to the pan and add the broth, fish & soy sauce and lime juice. simmer for 15 minutes to allow the flavors to blend.
  4. Give the soup a taste and add whatever you think it needs. Add the cabbage, red pepper, chilis and green onions. s\Simmer for 5 minutes or so.
  5. While the soup is cooking, prepare the noodles per the package directions. Add the cooked noodles to the soup and let everything get acquainted for another 5 minutes.
  6. Serve with a sprinkle of chopped cilantro and a squeeze of lime. You could also add a splash of Sriracha if you like.

  1. Heat 1 tablespoon of the oil in a large soup pot. Add the onions, garlic, ginger and red pepper flakes to the pot and cook stirring occasionally for 5 minutes or so, long enough for everything to get fragrant.
  2. Add the red curry paste and stir it into the onion mixture. Add the chicken stock and stir until the paste is well blended. Bring the mixture up to a boil. Reduce the heat and cook, covered for 15 - 20 minutes.
  3. Uncover the pot and add the vegetables. Simmer for a few minutes...about the time it takes to brown the pot stickers.
  4. In a large skillet heat the remaining oil over medium high heat. Add the pot stickers and cook until the flatter side is golden brown.Drop the browned pot stickers into the soup and continue to cook for another 5 minutes or so.
  5. Divide the pot stickers into 4 soup bowls. Ladle the rest of the soup evenly among the bowls. Garnish with sesame oil, sriracha sauce and the scallions. Serve.

Bechamel sauce
  1. Melt the butter in a small sauce pan. Add the flour and cook, stirring frequently for 2 minutes or so. Add the milk slowly whisking constantly to keep things smooth.
  2. Bring the mixture just to a boil, stirring constantly. Remove the pan from the heat and stir in the Parmesan cheese. Set aside in a warm place. If sauce gets too thick add a little more half & half.
Lasagna
  1. Cook the lasagna according to the package directions. Drain well and lay out on wax or parchment paper. Prepare the filling while the pasta cooks.
  2. Heat the olive oil in a large skillet. Add the onion and cook for 3 minutes. Add the bell peppers and mushrooms and cook another 3 minutes. Stir often during this step to insure everything is softening.
  3. Add the garlic and artichoke hearts and cook 3 minutes more or until everything is soft, fragrant, and lightly browned. Allow to cool before adding to the other filling ingredients.
  4. In a large bowl, combine the ricotta, eggs, pesto, and 1/3 cup of the Italian Cheese Blend. Mix everything together. Add the cooled vegetables and stir it all together.
  5. Spray a baking dish with non-stick spray. Place 2 lasagna noodles in the bottom of the dish. Spread half of the filling evenly over the noodles. Sprinkle with a little of the remaining cheese blend and drizzle a tablespoon or two of the Bechamel over the layer.
  6. Repeat the process with two more noodles and the other half of the filling. Sprinkle with cheese and drizzle with sauce as for the first layer.
  7. Top with the remaining two noodles. Spread the rest of the Bechamel sauce on top and sprinkle with the last of the cheese blend.
  8. Cover loosely with foil and bake in a pre-heated 350 degree oven for 30 minutes. Check to see if things are beginning to bubble. If not cover and bake another 5 minutes or so.
  9. When the lasagna is bubbly, remove the foil and raise the oven to broil. Broil the lasagna for 3 - 4 minutes or until it is lightly golden brown and even more bubbly.
  10. Allow to rest 10 -15 minutes before cutting and serving.

  1. Place the broccoli slaw in a large bowl. Add the onions and peppers.
  2. Combine the mayonnaise, orange juice, honey, and mustard in a jar with a tight fitting lid. Shake until the ingredients are completely blended.
  3. Pour the dressing over the vegetables. Toss to coat well. cover and refrigerate for at least 2 hours or as long as 24 hours.
  4. Serve with your favorite sandwich or grilled meat.

  1. In a deep glass bowl layer the ingredients beginning with the farro. Layer them at your whim, but aim for appealing color combinations. The only sort of rule is to end with the olives and tomatoes, but again that's up to you.
  2. Combine the dressing ingredients in a small jar with a tight fitting lid. Shake well until everything has blended together.
  3. Pour the dressing over the layered salad. Cover with plastic wrap and chill for at least 4 hours or as long as overnight.
  4. When ready to serve, top with the shredded cheese. Sprinkle with a few fresh herbs if that tickles your fancy, and serve.
