  1. Put the bare corn cobs and chopped onion in a soup pot. Add 5 cups water (or enough to cover) and a pinch of salt. Bring to boil. Reduce heat to simmer and cook covered for 1 hour. Turn off heat and allow to steep covered for another hour. Remove the cobs and onions and use in soup.
Chowder
  1. Heat a large soup pot over medium heat. Add the chopped bacon and cook until crisp. This should take about 5 minutes. Remove the bacon, let it drain on paper towels and reserve. Remove all but 1 tablespoon of the bacon drippings from the pot.
  2. Add the onions, celery, jalapeno, and peppers to the pot and cook about 5 minutes stirring occasionally, until they begin to soften. Add the corn kernels and cook another 2 - 3 minutes. Stir in the chili powder and cook 1 minute more.
  3. Add the half and half and corn broth to the pot. Bring to a boil. Lower to a simmer and add the shredded potatoes, green onions and thyme. cook 15 minutes until the potatoes are tender and everything is happy. Add salt and pepper to taste.
  4. Ladle the soup into bowls and garnish with the reserved bacon and grated cheddar.

  1. Trim chicken thighs of as much visible fat as possible. Layer in a 5 - 6 quart Slow Cooker coated lightly with non-stick cooking spray, placing the onions and garlic in between the layers.
  2. Mix the remaining ingredients together in a small bowl until well combined. Pour over the chicken, onion, and garlic. Move things around so that the chicken is evenly covered with the sauce.
  3. Cook on the low heat setting for 4 - 5 hours. The chicken should be very tender and just starting to fall apart. Remove the chicken to a heat resistant cutting board. Allow to cool for 10 minutes.
  4. Using two forks, shred the chicken into uniform pieces. Return the chicken and any accumulated juice to the slow cooker. Raise heat to high and tilt the cover slightly. Cook an additional 20 - 30 minutes,until the sauce has thicken slightly and everything is hot.
  5. Serve the Pulled Chicken in sandwiches, tacos, or quesadillas. It's also great sitting atop rice, pasta or corn bread. You can even eat it all by itself.
  6. Mama D's Poutine: Top oven baked french fries with Pulled Chicken. Garnish with any or all of the following: Shredded cheddar cheese, blue cheese crumbles, bacon bits, sliced green onions, ranch dressing.

  1. Heat oven to 400 degrees. Line a small baking sheet with foil and spray with cooking spray. Spread the drained tomatoes on the sheet and sprinkle with 2 teaspoons of the garlic, the red pepper flakes, and 1/2 tablespoon of the olive oil. Roast in the oven for about 15 minutes, stirring half way through. Set aside.
  2. Place the sausage links in a large skillet. Add water to a depth of about 1/4 inch. Bring to a boil. Reduce the heat and cook until all the water has evaporated, turning occasionally. Raise the heat and add a little of the olive oil to the pan. Cook the sausages until they are browned on all sides, turning often, about 5 minutes.
  3. Remove the sausage from the pan and cut the sausage into 1 inch chunks when it has cooled slightly. Set aside. Add two tablespoons of the oil to the pan and add the onions and peppers. Cook until tender but not browned, 5 minutes or so. Remove from the pan and add to the sausage.
  4. Add a little of the chicken stock to the pan and stir to remove the browned bits. Melt two tablespoons of butter in the pan. Add the flour and stir until completely incorporated. Cook for another minute stirring often. Slowly add the remaining chicken stock stirring to keep things smooth. Cook for three minutes or so. Add the reserved tomatoes to the sauce and stir to blend. Add the sausage, peppers, and onions to the skillet and heat gently.
  5. Slice the bread in half lengthwise. Melt the remaining butter and olive oil. Add the remaining garlic and brush on the cut sides of the bread. Allow it to soak in a bit. Cut the bread into one inch cubes. Arrange on a baking sheet and bake until browned, about 5 - 7 minutes.
  6. Place the bread cubes in a large shallow serving bowl or divide among four individual pasta bowls. Top with the sausage, pepper and onion mixture. Sprinkle with half of the cheese. Pass the remaining cheese at the table

  1. Cook bacon in large soup pot until crisp. Remove the bacon drain on paper towels. Pour all the drippings into a heat proof container. Return 2 tablespoons of the drippings to the soup pot and add the onion. Sweat for 3 or 4 minutes, until the onions begin to soften.
  2. Raise the heat to medium high and add the squash and apples. Cook, stirring occasionally until everything is slightly browned. Add the apple juice and stir to de-glaze the pan. Add the stock and bring to a boil. Reduce the heat to simmer, add the sage and cook, covered 30 minutes or until the squash is soft. remove from heat and puree with an immersion blender.
  3. While soup is simmering, heat a tablespoon of the bacon drippings in a small fry pan. Add the shallots and cook until carmelized, 15 minutes or so. Set aside for garnishing the soup.
  4. Return the pot of soup to the stove and simmer over low heat for a few minutes. Add the cream and heat gently until everything is steamy. Add salt and pepper to taste. If soup is too thick, add a little more stock or cider. If Soup is too thin, add 2-3 tablespoons of potato flakes. Heat until any additions come up to temperature.
  5. Ladle soup into bowls. Top each bowl with some of the bacon and shallots and sprinkle with the pepitas.

  1. Heat olive oil in a large skillet. Crumble the sausage into the pan and cook until the sausage is no longer pink. Remove the sausage from the pan and drain on paper towels. Leave the drippings in the pan.
  2. Add the onion to the pan and cook over medium - low heat until the onions are turning golden (About 10 minutes). Add the garlic and artichokes, raise the temperature to medium and saute until everything is golden. (about 5 minutes). If things are getting too dry, add a little chicken stock.
  3. Add the kale and saute until it is wilted (3 - 4 minutes). Add the red pepper toss to combine and continue to cook for 5 minutes longer adding chicken stock to keep things moving. Remove from heat and let cool.
  4. In a large bowl combine the bread cubes, cooled vegetables, and the cheese. add the 2 cups of chicken stock and toss to combine everything The mixture will be quite wet.. Cover and refrigerate overnight. This will allow the bread to absorb the stock and the flavors to meld.
  5. Use this as a stuffing for a turkey breast, a casserole side dish or just a guilty pleasure.
