Ingredients
- 1/4 Cup extra-virgin olive oil
- 3 - 4 Tblsp. Vinager You can choose your favorite
- Juice of half a lemon Use instead of vinegar if you like
- 1 Clove Garlic Pressed
- 1 Shallot Minced
- 1 Tsp. Prepared Mustard Pick the one that you like
- 1/8 Tsp. Agave Nectar/Syrup Optional
- 1 - 2 Tsp. Fresh Herbs The choice is up to you
- Salt & Pepper To Taste

Instructions
- Combine all of the ingredients except salt and pepper in a jar with a tight fitting lid.
- Cover jar tightly and shake until ingredients are completely blended.
- Taste dressing. Add a little salt and pepper and shake well, again. Taste and add more salt and/or pepper as needed.
- Store in refrigerator for up to one week.
