This is a twist on classic basil pesto. Use any herbs in the amounts that suit your taste. Adding panko bread crumbs turns it into a stuffing that is perfect for chicken breasts.
You can leave out the bread crumbs if your are tossing it with pasta or vegetables.

Ingredients
- 1 Lemon Juice and zest
- 1/2 Head Roasted Garlic
- 1/2 Cup Fresh Thyme Leaves
- 1/4 Cup Basil Leaves
- 1 Tblsp. Rosemary Leaves
- 2-3 Tblsp. Almonds Lightly toasted
- 1/3 Cup Grated Pecorino Romano
- 2-3 Tblsp. Olive Oil
- 1/4 Cup Panko Bread Crumbs I used Whole Wheat

Instructions
- Combine all the ingredients expect the panko in a processor. Stop when it is finely chopped.
- Scoop into a small bowl and add the bread crumbs.
