Ingredients
- 1 Can Whole Artichoke Hearts Cut in 1/2 inch pieces
- 2 Cups Grape/Cherry Tomatoes Any mix of colors
- 1/2 Cup Sliced Sweet Onion Cut in 1/4 inch slices lengthwise
- 2 Tblsp. Olive Oil
- 2 Tblsp. White Balsamic Vinegar
- 1 Clove Garlic Grated
- 1/2 Tsp. Dijon Mustard
- 1 Tsp. Itanian Herb blend I like McCormick Grinder
- 1/8 Tsp. Agave Syrup Optional, to taste
- Fresh Ground Black Pepper

Instructions
- Combine the artichokes, tomatoes, and onion in a bowl. Toss gently to mix.
- Combine the remaining ingredients in a jar with a tight fitting lid. Close tightly and shake until all of the ingredients are thoroughly blended.
- Pour the dressing over the vegetable and toss to coat. Cover and refrigerate for at least 2 hours (more is better).
- Serve with your favorite grilled meat, fish, or poultry.
