Sausage and Lentils on Spaghetti Squash

Everyone loves a big bowl of pasta smothered with their favorite sauce. It’s filling, comforting, not to mention tasty, but at times it can also be more than a little heavy. Spaghetti Squash is a nice alternative to pasta. This isn’t a replacement. It’s like comparing apples and oranges or vegetable and pasta to be more precise. They are different, but can both perform a similar function in a dish.

To me, the taste of spaghetti squash is somewhere between zucchini and acorn squash. It starts crisp and light like zucchini, but has a distinct winter squash flavor. The best of both worlds so to speak. It can be roasted in the oven or boiled on the stove. It can even be cooked in the microwave. The result is always threads of golden goodness that create a perfect canvas for almost anything.DIGITAL CAMERAThis go round I used it as a base for a simple sausage and lentil sauce that came together quickly with ingredients I had on hand. I had some lentils, but not enough to stand alone in a dish. I cooked them up with some vegetable stock and garlic until they were “al dente”.DIGITAL CAMERAThey were joined by chicken sausage. I have to say that I love this stuff. It’s available everywhere it’s precooked and comes in lots of different flavor combinations. For this dish I used Buffalo Chicken Sausage. It was flavored with hot sauce and pepper jack cheese. Any variety would work in this dish, so use what you have or love. Because it is pre-cooked, it heats quickly and has slightly less fat than a fresh variety (though the added cheese may negate some of that benefit). It’s a great ingredient to keep on hand and at less than $4.00 a (12 ounce) package it’s a cheap protein source.

Back to the sauce. Onions and garlic were present of course and canned fire roasted tomatoes brought the sauce together. I chose to let the lentils, sausage, and tomatoes speak for themselves, but fresh or dried herbs would make an excellent addition. A sprinkling of cheese wouldn’t hurt, either.

So once again, the pantry shared its bounty and the recipe muse visited and an easy, delicious and healthy dinner was born.DIGITAL CAMERA

  1. Cook the Spaghetti Squash: It can be microwaved or boiled whole. Make sure to pierce in several places to avoid explosions To oven roast; cut in half lengthwise and remove the seeds. Brush cut sides with a little olive oil and place cut side down on a lightly oiled baking sheet. Roast at 350 degrees for 35 minutes. Once the squash is cooked and has cooled enough to be handled, scrape the flesh with a fork to loosen the strands of squash. Drizzle with olive oil and add some freshly ground pepper. Keep warm .
  2. Rinse the lentils and drain them. Place in a medium sauce pan. Add 1-1/2 cups of vegetable stock and half the garlic. Bring to a boil. Reduce the heat and simmer until almost all of the stock is absorbed. Set aside.
  3. Heat a large fry pan over medium heat. Add the onions and cook for several minutes until they begin to soften and turn translucent
  4. Add the sausage and the remaining garlic to the pan and continue to cook until the sausage begins to brown and the garlic becomes fragrant. Add the cooked lentils to the pan and stir to combine. Cook for a few minutes to let everything get comfortable.
  5. Pour the canned tomatoes into the pan and stir everything up. Add a little of the remaining vegetable stock to loosen things up. Cook over low heat for 15 minutes or so. If things get too thick, add more stock. The mixture should reduce slightly and the flavors should come together.
  6. Spoon the spaghetti squash into four pasta bowls. Top each bowl with a portion of the sausage and lentil mixture and serve.

  1. Boil the orzo in salted water according to package directions. While the orzo is cooking, squeeze out the thawed spinach and crumble it into the bottom of a colander.
  2. When the pasta is cooked drain it into the colander with the spinach. Drain well, rinse under cold water, and drain again. Pour it all into a large bowl.
  3. In the meantime, chop the red peppers and onions and slice the olives. Remove all of the zest from the lemon with a grater and squeeze all of the juice into a small bowl. Set all of these wonderful things aside.
  4. Pour about 2 tablespoons of the olive oil over the orzo spinach mixture and toss to coat evenly.Open both packages of the dry soup mix and sprinkle them onto the mixture. Stir to combine everything very well. Add the lemon zest and stir well again.
  5. Add the reserved vegetables and toss to combine things.
  6. In a jar with a tight fitting lid combine the remaining olive oil, the lemon juice and the white balsamic vinegar. Cover and shake well to blend. Pour about 1/2 to 2/3 of the dressing on the salad and toss to incorporate.
  7. Cover the salad and refrigerate for at least 4 hours, but better yet, overnight. Store the rest of the dressing in the refrigerator as well.
  8. Just before serving, remove the salad from the frig and toss it well. Add the remaining dressing and toss again. Transfer to a serving bowl and feed the masses.

  1. Heat the olive oil in a large fry pan. Add the sweet potatoes and cook over medium heat for 5-6 minutes. They should be slightly brown.
  2. Add the onions and garlic and continue to cook for another 3-4 minutes. The onion should begin to soften and brown.
  3. Add the green chilies and cook for another couple of minutes.
  4. Add the black beans and the cranberries to the pan and toss to mix. Add the cumin, smoked paprika, and chipotle lime dressing, and toss once more.
  5. Cook for 5 minutes or so until everything starts to come together. Spoon into 2 shallow bowls and top with the crumbled Queso Fresco.

Sunday Gravy Casserole

I’ve shared memories of my father’s “Sunday Gravy, a classic Italian tomato sauce that was loaded with meatballs, sausage, and pork neck bones. Every Italian family has a recipe for this simple yet totally delicious staple.

Writing about my memories inspired me to make my own gravy. This was a few months ago and the batch I made was huge. Most of it found its way into the freezer and was promptly forgotten. I did create a braised pork recipe (check it out on my RECIPES page) that was the essence of the pork neck bones as I remembered them. Some of that wound up in the freezer as well.

Fast forward to this week when I was cleaning out the freezer. I found 3 cartons of beautiful red goodness. I knew they were all gravy, but I didn’t know what else was in them. So, I put the 3 ruby cubes in a pot, and let them thaw over low heat. What resulted was gravy filled with all three wonderful meats.

I cut the meats into bite size pieces and returned it to the sauce. I found a large package of extra wide egg noodles that reminded me of lasagna. These became the pasta component. A little ricotta, cheese, and herbs were added and Sunday Gravy Casserole was born. This is really a riff on Poor Man’s Lasagna. Just search by the title on my RECIPES page)

Every bite of this was filled with meaty goodness. There was just enough cheese to make it feel decadent. The noodles stayed firm and held their shape. It was too good to be eaten alone, so I sent a generous pan over to the “new parents”

  1. Cook the noodles in boiling salted water until just barely done (1-2 minutes less than package directions). Reserve a cup or so of the pasta water. Drain the pasta and rinse under cold water to stop the cooking. Set aside.
  2. Heat the gravy and meats in a large saucepan until bubbling gently. Add some of the pasta water if the gravy seems tight. Keep warm
  3. Beat the egg lightly and add it to the ricotta along with the Italian seasoning. Set aside.
  4. Put the mozzarella in the freezer for about 30 minutes (leave the packaging on). This makes the cheese easier to slice thinly. Slice the cheese 1/4 inch thick.
  5. To assemble the casserole: spray a large rectangular baking dish with non-stick spray. Spoon 1/3 of the sauce into the pan, spreading it evenly. Add half of the noodles and top it with dollops of the ricotta.
  6. Spoon another 1/3 of the sauce on top of the ricotta and noodles. Sprinkle with half of the grated cheese blend.
  7. Add the remaining noodles to the casserole. Top with the remaining sauce and sprinkle with the other half of the the grated cheese. Cover with foil and bake in a 350 degree oven for about 30 minutes.
  8. Remove the foil and top with the sliced mozzarella. Return to the oven uncovered and bake for another 10 minutes. The casserole should be bubbly and the cheese should be melted.
  9. Set the oven at broil and position the casserole about 4 inches from the heat source. Broil until the cheese begins to brown and bubble.
  10. Remove from the oven and allow to rest for 10 minutes before serving.

  1. In a deep glass bowl layer the ingredients beginning with the farro. Layer them at your whim, but aim for appealing color combinations. The only sort of rule is to end with the olives and tomatoes, but again that's up to you.
  2. Combine the dressing ingredients in a small jar with a tight fitting lid. Shake well until everything has blended together.
  3. Pour the dressing over the layered salad. Cover with plastic wrap and chill for at least 4 hours or as long as overnight.
  4. When ready to serve, top with the shredded cheese. Sprinkle with a few fresh herbs if that tickles your fancy, and serve.
