Ingredients
- 1 12 Oz. Jar Roasted Red Peppers Drained and roughly chopped
- 2 - 3 Green Onions Thinly sliced
- 2 Cloves Garlic Minced
- 1/3 Cup Ripe Olives Sliced
- 1/4 Cup Parsley Chopped
- 1/4 Cup Cilantro Chopped
- 1/2 Jalapeno Pepper Seeded and finely chopped
- Zest of 1 Lime Grated
- 1 Tblsp. Olive Oil
- Juice of 1 Lime
- Kosher salt & Pepper To taste

Instructions
- Put the peppers in a medium bowl. Add the onions, garlic, cilantro, and parsley. Stir to combine.
- Add the jalapeno and lime zest and toss to combine.
- Stir in the lime juice and olive oil and stir again to combine.
- Taste and add salt and pepper to taste. Cover and chill for several hours.
- Serve as a garnish for tacos or with chips.
