  1. Spray an oven safe baking dish with non-stick cooking spray. Place the peach slices, blueberries, and 1/4 cup of the toasted almonds in the dish.
  2. Add the cinnamon and almond extract to the fruit and toss to coat.
  3. Place the cookies, the remaining almonds, and the flour in the bowl of a processor. Process until everything is coarse crumbs.
  4. Place the crumbs in a bowl and add the melted butter. Mix until the butter is incorporated into the crumbs. Sprinkle the crumb mixture on top of the fruit.
  5. Bake in a pre-heated 375 degree oven for 25 minutes or so. The top should be golden and the filling should be bubbly.
  6. Serve warm or at room temperature, topped with whipped cream, yogurt, or ice cream. It's also delicious unadorned.

  1. Preheat oven to 400 degrees Wash the beets well and dry. Lay on a sheet of foil that has been lightly coated with non-stick spray. Roast in oven for 45 minutes to an hour. The beets should feel tender when pierced with a knife. Remove from oven and allow to cool enough to be handled.
  2. Peel the beets and slice 1/4 inch thick. Place in glass jar or zip top bag and set aside. You can prepare the liquid while the beets are roasting.
  3. Combine the remaining ingredients in a small saucepan. Bring to a boil over medium heat. Reduce heat and simmer for 5 minutes or so. Remove from heat and allow to steep for 30 minutes or so.
  4. Strain the liquid and pour it over the beets. Seal the jar or bag and marinate in refrigerator at least overnight and up to 3 days. Serve as part of a relish tray, in a salad, or as a side dish.

  1. Combine the apricot pieces and water in small pan. Simmer covered for ten minutes until plumped and tender. Drain and set aside.
  2. Preheat oven to 350 degrees. Butter a 9 X 9 baking pan. Combine sugar and butter until blended. Gradually add one cup of the flour stirring until a soft crumbly dough forms. Press the dough evenly into the bottom of the pan. Bake 25 minutes or until light golden. Remove from oven.
  3. Mix the remaining flour, salt, and baking powder in a small bowl. In a medium bowl, beat the eggs and brown sugar until they are thick and light colored. Stir in the extracts, blending well. Slowly add the flour mixture. Add the almonds and apricots, blending well.
  4. Pour the mixture onto the baked crust. Smooth evenly with a spatula. Return the pan to the oven and bake for approximately 30 minutes more. Top should be deep golden brown and feel springy.
  5. Cool completely on wire rack. Cut into 16 squares.

  1. Heat oven to 325 degrees. Whisk flour, soda, salt, and spices together in a medium bowl.
  2. Beat butter and sugars until fluffy. Add the eggs and extracts and continue to beat until well combined. Mix in the flour. Add the cherries, nuts, and candied fruit. Continue to mix until all the frui, nuts, and chocolate are evenly dstributed.
  3. Use a small cookie scoop to arrange dough on parchment lined baking sheets about 2 inches apart. Bake until edges are just beginning to brown, approximately 12 minutes. Let set on baking sheets for 1 minute before removing to racks to cool.
  4. Store airtight for up to 1 week.
