Instructions
  1. Preheat the oven to 350 degrees. Coat a bundt pan with non-stick cooking spray.
  2. Combine the butter, sugar, and 1 teaspoon cinnamon in a microwave safe bowl. Microwave on high heat for 2 minutes, stirring every 30 seconds. Pour into the bundt pan.
  3. Layer the apples and walnuts evenly over the caramel. Set aside.
  4. In a large bowl, combine the cake mix, pudding mix, eggs, oil, water, and the remaining 2 teaspoons of cinnamon. Beat for 2 minutes. Pour over the apple caramel mixture.
  5. Bake for approximately 45 minutes. Begin checking for "doneness" after 30 minutes. A toothpick poked in the center of the cake should come out clean. When cake is done, remove from the oven and cool in pan for 10 minutes.
  6. Carefully invert the cake onto the cooling rack. Allow to cool completely before transferring to a serving plate.

  4. Toast the walnuts over low heat in a small fry pan. Cut the cherries in half and remove the pits. Cut the grape tomatoes in half lengthwise. Set all of these aside.
  5. Divide the lettuce between two large plates. Slice the chicken thinly and place on top of the lettuce. Sprinkle the cherries, tomatoes and walnuts on top of the chicken. Drizzle some of the dressing over the salad. Top with the blue cheese crumbles and serve.

  1. Cook pasta according to the package directions, cooking one minute less than directed. While the pasta cooks, prepare the sauce.
  2. In a large fry pan, heat the olive oil. Add the chicken pieces and brown stirring often, 3-4 minutes. Remove from the pan and set aside.
  3. Add the onions to the pan and cook for 2 minutes. Add the garlic and asparagus and cook for 3 minutes more. Remove from the pan and set aside.
  4. Add about a 1/2 cup of the broth to the pan and stir to loosen any brown bits. Add about another 3/4 cup of the broth and bring to a simmer.
  5. Add the cream cheese and stir until it melts into the broth. Add half of the gorgonzola to the pan and stir until it melts in.
  6. Return the chicken, and vegetables to the pan and stir to coat with the sauce. Cook over low heat for several minutes. Add about half of the prosciutto to the pan.
  7. Drain the pasta and add to the pan. Toss to mix everything together and cook for a minute or two. If the sauce seems too tight, add a little more chicken broth until the desired consistency.
  8. Serve in shallow bowls topped with the remaining cheese and prosciutto and a sprinkling of the toasted walnuts and a few grinds of black pepper.
